Marking Knives - Simple, But the Essence of Accuracy

There is no tool perhaps more important to a furniture maker than a humble marking knife. This simple tool gives you the potential of absolute accuracy. The key is that unlike any other knife this has the bevel on one side only. By making sure that the bevel always faces the waste side of your job and holding your knife upright you can strike a line as deep and clear as you like. That mark will bestow absolute accuracy. Unlike a pencil line it does not have thickness, it says this component ends HERE. When you cut back to your knife line you will remove the waste back to the line, but if you look and still see the burnished surface left by the knife you know you have absolute accuracy.

An essential character of the marking knife is that it should have an extremely hard steel blade. Quite often you're marking knife is being pulled down the blade of an engineers square which will easily take the edge from your knife. Cheap marking knives such as those produced by Crown are NOT recommended, the blade is of inferior quality and is of rather insensitive design. Japanese marking knives are all metal construction, these are made from extremely hard steel which hold an edge well and can be recommended.

The blade that we like seeing on Japanese or European knives is the V pointed blade. This has the benefit of enabling you to mark on both sides of the line and still draw the blade towards you. The more conventional Japanese marking knife and the Crown marking knife will compel you to strike a line away from you if you seek to strike a line with waste on your left hand side of the line and the bevel facing in that direction.

The very best marking gauges we've seen are those manufactured by Blue Spruce, they have a V pointed blade and it's made from thin steel which has the benefit of giving more feel to the tool. Frequently you're seeking to click the blade into an existing line for example when scribing around a component, this tool helps you do this more easily. The blade is fitted into a beautifully shaped hardwood handle with a brass ferral. I think both Ebony and Cocobolo and are offered. Of the two sizes of knife I believe the smaller of the two is the more useful.

Chef'sChoice 15 Trizor XV EdgeSelect Electric Knife Sharpener Overview

The new Chef's Choice Trizor XV Sharpener is another breakthrough from the world's leading manufacturer of quality knife sharpeners. With ultra-sharp EdgeSelect technology and the stability of a triple bevel (Trizor) edge, you can hone your knives to a high performance 15 degree angle. The three stage process and efficient flexible stropping disks sharpen the edge with minimal metal removal, helping to extend the life of fine knives. Diamond abrasives on the conical disks in Stage 1 create extremely fine micro- grooves (for more bite), while simultaneously creating the first major bevel of the arch shaped edge. Stage 2 uses even finer diamond abrasives on conical disks which shape the second, smaller bevel with finer microgrooves. Stage 3 uses the patented flexible abrasive stropping disk system to create a microscopically smooth, sharp edge. It creates the third and final bevel while polishing the micro-grooves formed in stages 1 and 2. Stage 3 is also used to sharpen serrated knives, as it straightens and sharpens each tooth.
